It’s Zucchini time!
When I left the Buonrespiro on Friday afternoon, there were no zucchini- When I came back on Monday morning: this was the result:
Small Zucchini are delicious and easy to prepare. When they grow, a bit of creativity is needed. They need to be cut into different schapes
Then they can be dried, grilled, deep fried and pan fried. Drying is the most efficient way to reduce volume and to come to a storage enabled version, something like healthy chips.
Grilled and treated wit parsley, garlic and olive oil they resist also some days in the fridge. The spiralled Zucchini developed into my dinner. “Zucchini alla Carbonara”. yes, it is the same recipe, the past only substituted by Zucchini.
